Our Permaculture Journey

In 2008, we began our journey into permaculture, initially inspired by the idea of building an energy-efficient home. We wanted to eliminate rent, electricity, and water bills and to grow a garden that would replace our grocery expenses. Ultimately, we envisioned creating something quiet, beautiful, low-maintenance, and cost-effective—a system that would transform us from consumers to producers.

Over the years, we’ve dedicated our free time to experimenting, documenting, and refining this system, always focused on sustainability and economics. We aimed to be as self-sufficient as possible, minimizing off-site inputs and maximizing the dollar-per-hour value of our work. After years of experimentation, we now have a food forest and garden that produces a complete diet, yielding nearly $10,000 (compared with our local grocery store's non-organic products) worth of food on 2,000 square meters (1/4 acre) with just four hours of work a week.

What is inside this course?

Diet Design

We dive deep into creating a nutrient-rich, sustainable diet with easy-to-grow tropical staples. Define which part of your diet to grow based on your time and space—whether it’s maximizing a small area for nutrient-dense vegetables, fruits, and spices, or building a complete system that provides all the calories, protein, fats, and nutrients you need. Then, learn which crops meet these needs and how much space they require.

Let's look at how to grow our diet! We look at an example garden of a complete diet for a couple. We see how much space is needed for our mini farm & food forest. Our Crop Area and Nutrient Charts allow us to see the yield of the system and calculate how much of our diet they provide. This template is based on our diet and yields. It shows how we can grow a complete diet for a couple in just 2000m². Then you can modify it to fit your diet, scale it down for a smaller area, or expand it - as we do to feed on-site students and local restaurants. Growing a lot of nutritious food has never been simpler!

Permaculture Design

Once we have realistic goals defined, we go through a site analysis. We learn to read the landscape by looking at environmental factors such as rainfall, soil, zoning, sun exposure, and existing trees. Now we can apply our design to the site and create a master plan to use during implementation. This allows us to close nutrient cycles and build soil from on-site fertility.

Food Forest

We mimic the natural patterns of the forest with edible plants and trees. This creates an ecosystem for wildlife while producing food for us! It is low maintenance as the main work required is organizing pruned materials. It absorbs as much sunlight as possible by ensuring any open areas are filled with mulch species. In tropical regions, the yield of starches and proteins per acre of staple crops matches or exceeds that of annual crops. This is one of the most energy-efficient food production systems!

Mini Farm

The mini farm consists of beds that grow grains, beans, tubers, and vegetables — many of which are perennial and low maintenance. We analyze the soil to determine any nutrient deficiencies and learn to layout, build, fertilize and maintain beds. As well as grow mulch, make compost and biochar, and manage pests. It is powered by on-site fertility, and it is designed to regenerate the soil. It takes little work and little to no weeding and watering. The system also integrates tropical stingless bees for honey and chickens for eggs, creating a productive and self-sustaining ecosystem.

Homestead Infrastructure

Beyond home design and building materials we look at the infrastructure necessary to provide for our energy, along with reducing energy and water needs and how to cycle nutrients back through the system. Using domestic solar power, solar hot water, cooking on fire, rainwater harvesting, kitchen waste recycling, and wastewater nutrient capture. Moreover, we will address the essential food processing equipment like solar dehydrators, oil presses, grain mills, and pressure cookers.

Crop Profiles

Finally, we go in-depth with our 60+ most important food crops and detail why each is one of our favorites, the varieties we chose and how many of each we grow for a small family, how we propagate, plant, fertilize, prune, and deal with pests and disease, and how we harvest, process, and prepare them, using many recipes of our favorite ways to prepare each.

Wellness Kitchen

You will learn about the nutrition and healing properties of your foods. We will look at different cooking techniques and how to process foods to stock your pantry with flours, sugar, oils, vinegars, wine, sauces, spices, teas and more. Also, many delicious recipes on how to prepare your food from your mini-farm and food forest. Additionally, you can check the Nutrition Chart and the Sample Week Menu.

She has served as a legal advisor in the Costa Rican Congress and has experience organizing community development projects focused on marginalized communities and autonomous development. Ana founded the BioRegional Plan for Talamanca County, advocating for food security, regenerative design, eco-legal policies, alternative economics, and preserving local cultural identities. She is deeply committed to advancing sustainable solutions that drive transformative change in our food sovereignty and the legal, educational, and political systems. She strongly focuses on promoting sustainable living on a family and bioregional scale.

Ian holds a Magna Cum Laude in visual arts, and is a recognized as a sustainability consultant, permaculture designer, and educator with over a decade of experience.
